Procedure: Prepare a stock solution of albumin in egg whites adding 100 mL of water distilled into a beaker. Stir until the albumin is the solution. (Note: Albumin is the term used to describe the components different proteins in egg white) Place 5 ml of albumin in each of the four test tubes. Label the tubes A, B, C, D. Deal the four solutions as follows: Tube A-Let stand at room temperature. Measure the temperature. To determine the pH with pH paper. Tube B – Heat the tube in a water bath boiling for 10 minutes. Tube C – Add 2 mL of HCl 1 million. Determine the pH of the solution. D-tube add 5 drops of 2% AgNO3 (a silver salt, heavy metals). If there is no change in the appearance of albumin, continue to add AgNO3 dropwise until a change is observed.
